Carrot, Apple and Orange Salad

Ingredients – Serves 4

  • 3 medium carrots

    peeled and thinly julienned

  • 2 apples

    cut into thin matchsticks and tossed in a little lemon juice

  • 2 large oranges

    peeled and thinly sliced

  • Ginger infused Olive Oil

    2 Tbsp

  • Carrot, Apple and Orange Balsam Vinegar

    4 Tbsp

  • Chopped Pistachio nuts

    2 Tbsp

  • Fresh Ginger

    small thumb size piece

  • Chia seeds

    1 tsp

  • Chopped Mint

  • Sea Salt & Black Pepper


  • Step 1.

    Peel and finely chop or grate the ginger

  • Step 2.

    Blend together the Ginger infused Olive Oil,  the Carrot and Apple and Orange Balsam Vinegar, the fresh ginger and season with a little salt and pepper to taste.

  • Step 3.

    Toss the julienned carrots and apple sticks together, pour over the dressing and mix together well so they are all coated.

  • Step 4.

    Arrange the orange slices in a circular pattern on a plate and sprinkle lightly with chia seeds.

  • Step 5.

    Stack the carrot and apple mixture on top of the bed of orange slices.

  • Step 6.

    Finally, sprinkle the salad with the pistachio nuts and scatter over some chopped mint.
    The dish is now ready to serve.
