Crispy Fried Tofu with Coconut Dip

Ingredients – Serves 4-6

Directions

  • Step 1.

    Heat Rapeseed oil to 190℃ in a heavy pan.

  • Step 2.

    While waiting for the oil to heat up, make the Coconut Dipping Sauce.

  • Step 3.

    Combine all of the dipping sauce ingredients in a blender or food processor and puree until smooth.

  • Step 4.

    Pat the block of Tofu dry and cut into 1-inch cubes.

  • Step 5.

    Gently ease half of the tofu cubes into the hot oil and fry until golden brown and crispy.

  • Step 6.

    Remove from the hot oil with a slotted spoon and set on a paper towel to drain. Immediately sprinkle with a little sea salt. Fry the next batch of tofu and repeat.

  • Step 7.

    Serve the Fried Tofu hot with the Coconut Dipping Sauce on the side and sprinkle over some chopped spring onion and fresh coriander to finish.
