Salmon & Crayfish Tartare with Avocado
Ingredients – Serves 4
- Sea Salt
- Freshly ground black pepper
- Slices of Avocado
- Slices of pink Grapefruit
Cut the avocado in half, remove the pit, spoon out the flesh, and cut into small cubes.
Finely chop the coriander, and add to the avocado and vinegar in a bowl. Mix together well.
Cut the salmon and crayfish into small pieces. Add to the avocado mix, along with the infused olive oil and salt and pepper. Mix well again.
Form a tartare by filling a metal ring. Serve on a platter, and garnish with alternate slices of avocado and pink grapefruit.
